Mother’s Day Treats

Make sure to treat your mom this Mother’s Day with delicious breakfast/brunch treats!

Mother’s Day is approaching fast! May 8th is the big day for moms across the world and what a better way to celebrate than with some delicious recipes for the holiday? 

The first recipe is sure to be a favorite to many, The Best Blueberry Waffles + Blueberry Sauce!

Ingredients: 

  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 1 large egg
  • 4 tablespoons butter, melted (substitute coconut oil for dairy-free)
  • 1 ¼ cups milk (substitute non-dairy milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 2/3 cup fresh or frozen blueberries
  • 1 recipe Quick Blueberry Sauce, for serving
  • Greek yogurt or Whipped Cream, for serving (optional)

Instructions:

  1. Preheat the waffle iron to the high heat setting.
  2. In a medium bowl, mix the all-purpose flour, whole wheat flour, baking powder, cinnamon, and kosher salt until thoroughly combined. In another bowl, whisk the egg. Then stir in the melted butter, milk, vanilla, and maple syrup. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Stir in the blueberries.
  3. Immediately, add the batter into the center of the waffle iron and let it spread to within 1/2-inch of the sides, then cook according to the waffle iron’s instructions. Remove the cooked waffles and place them on a baking sheet without stacking. Make the waffles to order, or place cooked waffles in a 300°F oven to keep warm. Serve with Quick Blueberry Sauce. (As a note, these blueberry waffles stick to the waffle iron a bit more than a standard waffle, so make sure to clean it afterwards.)
  4. Cooked waffles can be frozen; place them in a plastic bag and remove the remaining air with a straw before sealing. To reheat, remove from the freezer and lightly toast in a toaster(ACOUPLECOOKS).

The second recipe on the list is a Strawberry Parfait! This is a super simple and easy recipe that families can enjoy together! Feel free to also customize the recipe and substitute the strawberries for another fruit such as: peaches, raspberries, blueberries, ect. 

Ingredients: 

  • 1 cup wee granola or your favorite brand
  •  1 cup plain greek yogurt 
  • 1 cup sliced strawberries 
  • honey to drizzle

Instructions: 

  1. In your prettiest glass or serving bowl, layer granola, Greek yogurt, A drizzle of honey, and the sliced strawberries. Repeat in that order until you fill your glass or serving bowl, finishing it with a dollop of Greek yogurt, another drizzle of honey, and a small whole strawberry on top. 2. Serve(WEELICIOUS).

The next recipe can be shared with many, Healthy No Bake Granola Breakfast Pie! 

Ingredients: 

  • 3 cups granola
  • 1 cup peanut butter
  • 1/3 tbsp cinnamon
  • 1 1/2 cups greek yogurt
  • 1/3 cup chopped almonds
  • Toppings of your choice: such as more granola blackberries, raspberries, chopped almonds, pistachios, dried cranberries, shredded coconut, chocolate chips

Instructions: 

  1. In a large bowl, mix the granola, chopped almonds, cinnamon, and peanut butter until combined.
  2. Add the granola mixture into a 9-inch pizza pan lined with parchment paper. Press down firmly.
  3. Chill for an hour to let it set. Or you can leave it in the fridge overnight
  4. Remove from the pan, then top with yogurt. Add your favorite fruit and toppings. Serve and enjoy(IZZYCOOKING)!
